Medium Rare is unique, because we individually select each carcass for each customer. We can supply the specific carcass weight that you are looking for along with the specific probage of fat cover and we can do this consistently, week, after week, after week.

We use two principle slaughterhouses: Peter Coates, Alrewas and R.B. Elliot & Son, Chesterfield.
